Method

Salt & blot the eggplant

Preheat the oven to 425°F. Slice the eggplants lengthwise about 1/4 inch thick. Sprinkle lightly with salt, let stand for 20 minutes, then blot the slices thoroughly dry. Grease a 9 × 13-inch baking dish with a little extra olive oil.

Roast until tender

Arrange the eggplant in a single layer on baking sheets, brush both sides with the 3 tbsp olive oil and season with black pepper. Roast for about 20–25 minutes, turning halfway, until tender and lightly browned. Work in batches if necessary rather than crowding the pans. Lower the oven to 375°F when the eggplant is ready.

Brown the sausage & thicken the sauce

While the eggplant roasts, brown the Italian pork sausage in a large skillet, breaking it into crumbles. Cook the sausage to 160°F measured with a food thermometer; drain excess rendered fat if needed. Add the onion and cook until softened. Stir in the garlic, Italian seasoning and optional crushed red pepper; cook for 1 minute. Add the 32 oz marinara and simmer uncovered for about 10–15 minutes, until thick rather than watery.

Mix the ricotta filling

In a bowl, stir together the 15 oz ricotta, 1 large egg, 1/4 cup of the Parmesan, 1/4 cup chopped basil and black pepper to taste. Reserve the remaining 1/4 cup Parmesan for the top.

Build three eggplant layers

Spread a thin coating of the sausage marinara over the bottom of the greased dish. Divide the sauce left after that coating into three equal portions. Layer one-third of the roasted eggplant, half the ricotta mixture, one sauce portion and 3/4 cup mozzarella. Repeat with another third of the eggplant, the remaining half of the ricotta, a second sauce portion and another 3/4 cup mozzarella. Finish with the last third of the eggplant, the last sauce portion, the remaining 1 1/2 cups mozzarella and the reserved 1/4 cup Parmesan.

Bake covered, then brown the top

Loosely cover the dish with foil, keeping it off the cheese. Bake at 375°F for about 25 minutes, then uncover and bake about 15–20 minutes more, until bubbling and golden with the center at 165°F measured with a food thermometer. Continue baking if needed to reach that temperature. For extra color, optionally broil briefly while watching constantly.

Rest, slice & serve

Let the lasagna rest for 15–20 minutes so the layers settle before slicing into 6–8 portions. Finish with extra basil if desired. Prep, roasting, baking and total times are estimates, not guarantees: use tender eggplant, thick sauce, bubbling cheese and the stated food-temperature endpoints. No noodles are used in this recipe.
